Ben asks his dad if she said anything else and he mentioned that her mother spoke about her sacrifices It keys the memory. When Ben was a child his mother told him ancient stories and myths and the hummingbird was one that she told him often. The hummingbird was the heroine who saved her family (the earth and the moon) from destruction She sacrificed herself for the others. Set the hummingbird free was meant to tell Ben that she would lead them on another path to protect Ben and Patrick. The scene was cut because the movie was running long and they changed the sequence to fit what they needed.
