Some what yes and no. Beacuse in a ratio on howrse the dapple gray coat is 7% witch means it is rare but not so much. Most common would be 12% and least common would be 2%.
I don't remember anything special about Jimmy Stewart's coat in that movie, but since it was depicting a story from a century earlier, I think it likely that the coat was made for him by a film costume designer, and based on photos and illustrations from the Civil War. If there is no coat like it available today, one could certainly be recreated in the same manner by using the coat from Shenandoah as a model. If it was a Mackintosh coat, I think they are still available today.
That will depend upon the type of Shetland you are looking at.... British or American.... And what you are looking at doing with them. American Shetlands have been bred to be great all around ponies, from the somewhat drafty Foundations to the highly animated Hackney crosses there is something for everyone... I show my Foundation American Shetland in open shows both in hand and driving and do pretty well, then turn around and go on a trail drive. As for temperament... buy registered. Bad tempered ponies are not tolerated in the show ring.
Shetland ponies tend to be quite mischievous and sometimes a little bit aggressive. They can be friendly , but careful when you get on ones back ! Last time i rode one i got slammed against the fence , and nearly landed in barbed wire.

Brush out the dog's coat, every day if possible, to remove tangles and mats from the undercoat. Use pin brushes, slicker brushes, natural bristle brushes and metal combs alternately, depending upon the state of the coat and the number of mats. Apply a mist of water before you begin to help de-tangle the fur and only use the metal comb when necessary. De-mat the dog's coat by using a splitter or mat rake for significantly bad tangles. Applying detangling spray before brushing out the coat may make it less painful for your Shetland Sheepdog. Keep the hair on the head trimmed close and short. From all angles the head of the Shetland Sheepdog should look like a wedge angling in from ears to nose. Use a moist piece of soft cotton cloth to remove dirt and grime that can collect in the corners of the Shetland Sheepdog's eyes. Trim the coat as needed with scissors to keep the body looking as symmetrical as possible. This is a distinct look of any collie, and no part of the animal should look out of place with the rest of the body.

If you maintain your dog as an "inside" dog and keep your thermostat set to about 55 degrees it should be no problem. You may need to upgrade your A/C system to do this though. Good Luck!
