Well, the answer is simple for me. There were 4 or 5 St. Bernards used for the role of Cujo. They weren't the only ones. There was a Man in a Dog Suit as well, a Mechanical Dog Head, and a Dog Suit for a different dog.

That was a "dogue de bourdeaux". I hope I have the spelling correct. A lot of people thought it was a Bullmastiff but it was not. The pups shown at the end of the movie were actually bullmastiffs but Hooch was a dogue de bourdeaux, a French Mastiff. They have been recognized fairly recently by the American Kennel Club as a breed in the Unites States and now can be shown in the AKC shows.
