Do you mean within the plot lines of the episodes? If so, just about every instrument that exists since full orchestras have been represented in at least 2 episodes.

If you mean instruments that compose the music for the show, it's the same answer. Family Guy uses a 60 piece orchestra to perform the music.

Walter Murphy has a full orchestra at his disposal so there's usually 100 people in a full size orchestra so a hundred give or take.
