We don't learn a lot about that in Twilight. In New Moon and Eclipse, we learn that as long are vampires live nearby, there will be werewolves. Jacob tells Bella that he will not age for a long time, simply because there is a need to werewolves. However, when vampires leave and Jacob is able to exercise a great amount of control and not make the change, he will resume the aging process.
In short, no, he is not immortal, but as long as he changes into his werewolf form, he will not age.
