The general number of screen (movie, tv, and commerical) actors in the US is probably roughly around 120,000-130,000. This is based on membership of SAG and AFTRA (now the combined SAG-AFTRA). Now, some people act who are not in the unions, but all actors who are serious about working as actors for a living (or even part of a living) are in the union. Celebrity is a broad term. you could say 'actors' or 'singers' or whatev. but celebrities could include radio hosts that people like to Will Smith.
