By imitating the voices of the trolls, Gandalf managed to make the trolls fight among themselves. This went on so long until the sunlight surprised the trolls; converting them into stone. The trolls were supposed to seek refuge in some cave or something, before sunrise.

As they were questioning him, Balin came in, quite unsuspecting of anything. The trolls jumped him before he knew what's what. Then they hid behind the trees out of the light and waited for the other dwarves, who they promptly caught in a sack.

Foe Hammer is a sword. Its name in Elvish was Glamdring; the king of Gondolin once wore it and Gandalf got it from the Troll's cave. The goblins called it Beater.
Trying to decide the way they were going to cook the dwarves. Gandalf threw his voice to add to the confusion.
I suppose you mean in "The Hobbit". It was Gandalf, who was hidden and disguised his voice to sound first like one of the trolls, then as another, and so forth.
