The door turns visible on a specific full moon every so often. The riddle has something to do with the time the thrush cracks the snail. Bilbo hears the thrush crack the snail, and realizes that today is the day the door can be opened.

After they caught Bilbo, the dwarves came looking for him. As they got around the fire the trolls popped a sack over their heads. It all started when they caught Bilbo. As they were questioning him, Balin came in, quite unsuspecting of anything. The trolls jumped him before he knew what's what. Then they hid behind the trees out of the light and waited for the other dwarves, who they promptly caught in a sack.
The morning sunlight is what caused them to turn to stone.
After escaping the Goblins initially during the first attack, he follows the Goblins and their captives to the Goblintown. When the Great Goblin was about to attack Thorin, Gandalf revealed himself, drawing his sword, Glamdring, white emitted burning, white sparks that burned into the Goblins around him. He slew the Great Goblin and led the Dwarves out of the tunnels in the confusion, Bilbo accidentally getting lost along the way out.
Gandalf did, he tricked the trolls into talking until the sun came out and then they turned to stone. :)

Gandalf stalled them by making them argue with each other until the sun came up. When the sun comes up trolls need to be in a cave or in a hole because they turn to stone when the sun hits them.
The trolls were going to eat the dwarves. They were arguing over the best way to fix them, egged on by Gandalf, when the sun caught them and turned them to stone.
An example of allusion in "The Hobbit" is when Gandalf refers to Trolls turning to stone when caught in sunlight. This alludes to the mythological legend of creatures turning to stone when exposed to sunlight, such as in the story of Medusa in Greek mythology.
