Father Remington is an angel in the anime, but he isn't one in the manga! It says he just has Legion (a devil's equivalent to cells) infused inside of his body. I think in volume 6 or 7 the Elder says about 30%.
Also, Rosette doesn't die at 16, she dies at 24. She waits for Chrono to come back to her. Because right before he goes off to fight Aion by himself he kisses her and tells her he will come back to her.
