Well, he's a legend, we don't even know in which king's time he lived - if he did - not to mention his appearance But, there's mentioned that he was a Saxon. Saxons used to have fair hair and fair eyes, so he would probably be blond with blueish or grayish eyes.
Nothing for sure though; i.e. in all of those film adaptations, he's everyone and he looks just like everything, literally.
