It is actually a simile because it is using 'as' to compare something to honey. If it was for example: 'The sorbet was sweet honey melting in my mouth.' That would be a metaphor.

In other words to see whether something is a simile, it needs to use 'like a' or 'as a' to compare something to something else.

No a simile is a comparison using the words "like" or "as." If you said "sweet as pie" it would be a simile.
