If you have firefox you can also download the Easy YouTube Downloader add on from firefox.com, and download either entire videos or just the mp3 versions to go on your iPod or desktop.

Also check out mp3skull.com

Edit: video2mp3.net is a good one too. Also try recording your computer audio and playing the video. It usually gives you the best audio quality. (according to my experience)

On your YouTube account go to your video manager, then on the bottom left click "Create" where you'll have access to an entire library of uncopyrighted music. It's actually got some good stuff there if you spend the time to find it.
