Perhaps you are seeing a "duffle bag" cut. After WW II, soldiers that wanted to bring a rifle home would cut the stock, so that it would fit in their duffle bag without being seen.

Can a savage striker pistol stock be replaced with a full length rifle stock?

Since the Striker pistol is based on the same bolt actions Savage uses in it's rifles, it probably can fit in the rifle stock, but may require some minor modification to the stock. That being said, what you would then have would be illegal under federal law. You can't put a rifle stock on a firearm w/ a barrel shorter than 16" . You would have to go thru a lengthy process apply to the BATF for a permit and pay a tax to own the weapon. You'd go thru the same process as buying a fully automatic weapon or a silencer.

Can you fit a bi-pod to a breakbarrel air rifle?

Not very easily. Most break barrel rifles have a notch running under the stock so you would have to mount the bi-pod way back on the stock, making it unbalanced. This is not something I would recommend. I would suggest you get a set of "Sandbags Rest" for rifles and place the rifle on them to shoot.
