Yes. They will not taste the same but it would be healthier for you. The artificial sweetener will make the cookies sweeter than real sugar would though.

Artificial sweeteners can be toxic. I'd recommend unsweetened coffee or tea for an energy drink instead. If you need a sweetener, stevia is the only healthy sugar alternative.
