Typically people will clap to show appreciation, or excitement. A good example of appreciation at a performance can be displayed by how loud someone claps.

Clapping allows the performer/speaker to gauge how much the audience enjoyed their performance.

You can also clap or snap your fingers to a beat of a song or musical rythm you enjoy. Or clap in somebodies face to annoy them.
