Why can't you text in wide screen landscape mode on the iphone?

Who knows. I think apple doesn't want it like that, like when you check your email on the phone, it's not widescreen. I think if it gets updated, it's going to have it, if not, then I think it will be on the new iPhone 3G s Hope this helps :)
