Most gays aren't overly muscular, the ones who are, are the minority just like in the straight community. In the gay community there seems more pressure to keep yourself in-shape for your partners enjoyment.

The guys you're noticing have made themself healthy-looking to attract a mate (or at least a good lay). As a rule, men are more turned on by visual stimuli than women. That's why most pornography is aimed at men. Gay men know that, and we pay a lot of attention to our looks. Or at least a lot of us do. Excuse me, I'm going to go do some pushups.
