Complex carbs take longer to break down into sugar and they also contain fiber, so sugar gets released into your bloodstream little by little. This way the energy lasts you longer. With simple carbs, sugar gets released into your bloodstream all at once and causes a "high" and then a "crash". Then what happens? You need more energy and need to eat again.
