im not 100% on this but ive heard that in midieval days people believed that when a man was drunk and disorderly or mean that evil spirits had entered him thru the drink so it could have to do with that. Alcohol brings out the spirit(The inner beliefs and morality that guide that particular individual) that is most prominent in us while reducing our inhibition(wall) that is a defensive mechanism clouding our true self.

During the distillation process, and the barrel aging process if applicable, you lose some product through evaporation, so it's kind of floating around in the air like a ghost (seriously). People also call the evaporated portion the "Angel's Share."
