When guy calls you ma'am?

I actually wanna know the answer why guys call me ma'am or madame. I personally find it insulting cause it feels like im bossy or something. There are time a guy make fun of me and calls me Ma'am but i know its a joke but recently i cant figure out the reason why.

I'm liking a guy and actually got his number and i'm inviting him outwith friends every fridays of the week. But recently everything changes. We stopped going out though its my choice since i can feel he's a flirt and is prowling with other girls so i'd stop asking him out.

Since i do like the guy so much. i cant help but text him anyway but recently his calling pattern changes. He never calls me with my name instead merely just answer a conversation or so and now with the answer to my question or a flow of the conversation and with ma'am or madam and i get frustrated cause i wanna know whats the point of calling me that now :(

Though to clear things up. He's taken which we know it from the start. and i was thinking if he does that he's with the girfriend but there was a time when we we're at work and the girlfriend dont work here and still calls me madam :(
