Beer is created from fermented grains, the most common of which being barley. The barley is first malted, or roasted to the point when the grain begins to germinate. The husk is removed from the roasted grain, which is then ground and cooked in water to flavour the wort. The aforementioned stages are referred to as "mashing" by brewers.
The majority of wine is made by fermenting Grape Juice. You can't just use any kind of grape, either. Wine grapes are required. The amount of sugar in normal grapes vs. wine grapes is the differential. The higher the sugar content in wine grapes, the more alcohol can be created during fermentation.
The German Purity Laws allow only four ingredients.
Malt - Normally made from barley, but wheat is often used and many American Lagers have Rice.
Water - The water and the trace elements it contains can have a large affect on the resulting flavors of the beer.
Hops - These oily flowers provide the 'flowery' taste as well as act as a preservative. Other herbs and spices are often added for specialty beers.
Yeast - There are two primary types Lager and Ale, with lots and lots of varieties of both. The yeast converts the sugars from the Malt into alcohol. The by products of the conversion are key to producing the different flavors.
Water, barley, hops and yeast are the basic ingredients of beer. Adjuncts such as additional grains - corn, rice, rye, oats, wheat; various sugars - such as Belgian candy sugar (beet), brown sugar, molasses; fruits; nuts and and even herbs & spices are incorporated into various styles of ales and lagers.
To get the malt, brewers soak the barley in water let it sprout. Then the barley will be dried and the sprout will be remove, leaving only the starch, or malt. The malt is ground and mixed with water to form a mash (soft mixture of cooked grain or bran).Then it is added to another mash, a preparation of cereal grain such as maize or rice that has been crushed and heated. This procedure converts the starch into sugar. Dried flower from the hop plants are added for flavor, and then the mash is fermented.
Brewers age beer for several weeks to develop its taste.
