Maybe someone with more science history can answer this later, however studies have shown that cooked meat is more healthy because cooking up to certain temps kills any type of bacteria which may be living on the meat. However studies have also shown that cooking vegetables actually reduces the vegetables value index, in other words lowering the good qualities for which we consume vegetables. Many vegetables when boiled, give off their nutrients which are then washed away as we drain the vegetables.
