Stewed tomatoes are cooked or stewed and diced tomatoes are cut into pieces but all tomatoes remain tomatoes no matter what you do to them.

Not true at all. During processing of diced tomatoes a firmer less ripe tomato is used to hold up for a smaller cut, while stewed tomatoes are from fruit that is vine ripened longer and much more flavorful. Different tomatoes and lengths of ripening vary for all canned products which affects flavor.

processing starts in the form of whole , the perfect complete tomato . those that are too big , small or shaped irregular go to the slicer and all the bruised, flawed leftovers hit the crusher and the juicer is there to cleanup the mess.

Stewed tomatoes contain no skin, so, skinned diced tomatoes could substitute, just cook the raw tomatoes a little longer, until tender.
