During processing of diced tomatoes a firmer less ripe tomato is used to hold up for a smaller cut, while stewed tomatoes are from fruit that is vine ripened longer and much more flavorful. Different tomatoes and lengths of ripening vary for all canned products which affects flavor.
No, diced are more chunky chunks of tomatoes, where as crushed looks more like a sauce to me. I guess it's preference to. I like to use diced with my lasagna but some people prefer crushed.
