single touch is the basic touch screen functionality.. you touch the screen and that is like moving around a mouse and a tap like a mouse click. multi-touch is the ability to use more than one finger to do even more things like 2 finger slides to pinch and stretch and other stuff.. the first popular multitouch interfaces are apple products APPLE has a patent on multitouch and is trying to sue other companies for the technology
