A pie takes the shape of the pan, plate, or dish that it's baked in and is usually cut in triangles or squares to serve. A tart uses the same ingredients and method but is much smaller; it's a pie made in the size of one serving.

A pie has a pastry crust. A tartlet has a pastry bottom, no crust, and is small - commonly called a jam tart in Britain.
