The difference would lie first and foremost on location/jurisdiction. Depending on the state's constitution, the constable would have the same power/authority as a sheriff including appointing deputies. The main difference between the two however is in the way they earn their wages.

Sheriffs are salaried offices paid by taxpayer money whereas constables are paid by fees set by statute. Also, the authority of the constable is greatly dictated by the commissioning body (if appointed) or by the general statutes, if elected.
