The main difference between the quota and stratified sampling is that in the stratified sampling the researcher can not select the individuals to be included in the sample (he doesn't have control over who will be in the simple), but in the quota sampling the researcher has control over who will be in the sample (he can contact certain people and include them in the sample).

A census would get data from 100% of the population (or at least close to 100%). Sampling would be to get data from some of the population (much less than 100%).
In a probability sample, each unit has the same probability of being included in the sample. Equivalently, given a sample size, each sample of that size from the population has the same probability of being selected. This is not true for non-probability sampling.
