Night falls, as in the expression meaning "night is approaching", but it doesn't break, as "night" is an abstract noun. And day breaks, as in the expression "daybreak", meaning the time of day during which the sun first appears. However, "day", as well, is an abstract noun and cannot literally fall.

The answer to this riddle is "night and day." Night "falls" at the end of the day, but it doesn't physically break. Day "breaks" when morning arrives, but it doesn't fall apart.
