This does work (for me at least..) because I had this exact problem (jailbroken iPod touch stuck on recovery mode screen) and I just kept experimenting to fix it. You're going to need a different computer with the latest iTunes installed. Simple turn on iTunes, plug in your iPod touch with the new computer and it should say that iTunes has found an iPod in recovery mode. Press ok and click 'restore'. Then just go through the rest and you'll be downloading the latest firmware for you iPod Touch. Hope this helps you and other people with this problem.
