You need about a tablespoon, total, of the two essential fatty acids (EFA -- linoleic acid and alpha-linolenic acid), so that's the minimum, but it would presume that you had a pure source of these fatty acids. In the real world of eating, where food fats differ in their content of EFA (some provide little, others provide much), you'd need to eat more fat to be sure you get enough EFA. We probably also get some other benefits from eating more than the minimum, such as promoting absorption of the fat-soluble vitamins and perhaps some of the antioxidants. The current recommendation is that adults get from 20-35% of their Calories from fat. At 2000 total Cals eaten, that's about 45-78 g of fat per day; or for 2500 Cals, it's 55-97 g of fat per day.
