I'm sure you can Google this haha, but, preferably I think shrimp is because of it's small size. But of course it has it's both. Shrimp; can be really unhealthy if it's like KING SIZE. Then the head would be fat full of fats. Chicken isn't really healthy either if you count it...think about it. The skin on the chicken probably gave you a few calories. But again...you can make use of chicken soup, when you're sick. Hope I've helped :]

Baked chicken might be healthier if you mean fried chicken as in "oil" fried chicken. If you are just frying the chicken itself with no other ingredients, then the fat will be fried out of the chicken, so that could be considered healthier.

That would not be a good idea. If you start the chicken first and get it almost completely cooked and then add the shrimp, you would be okay. If you start them at the same time, the shrimp will be terrible overdone and rubbery. If you pull the shrimp out as soon as it is done, it will be contaminated by the still raw chicken.
I would say a cheese sandwich is healthier, but that is just my opinion
