How often do you text your crush?

If you get her number that day I say wait till about 12 or 1 the following day. It gives them time and usually they're awake and barely starting their day and who knows it may make them happy the fact that someone remembered them lol

But what is "too often"? Once every day? Every second? Twice a week?

well, I wouldn't advise you to do it too often, you don't want to irritate the person to the point that they don't want anything to do with you........
