EFLS is an acronym for Edible Food-Like Substances, coined by author Michael Pollan and referred to in his book, 'The Omnivore's Dilemma'. Pollan suggests you can choose real foods over EFLS by the following rule-of-thumb: 1. Don't eat anything your grandmother wouldn't recognise. 2. Don't eat anything with more than five ingredients, or with ingredients you can't pronounce. 3. Don't eat anything containing high-fructose corn syrup (HFCS). It should be stressed that Michael Pollan profits in various ways from the sale of his books, and that there are opinions that differ from his. Many of those opinions come from people involved with or working for companies which profit from the sale of what Pollan calls EFLS. You would need to buy a copy of the book, or borrow it from your library, and make up your own mind after reading it and other opinions on the subject.
