iPods, like all batteries vary over time. A new iPod can last many, many hours without failing, whereas one several years old can easily die in a short amount of time.
It also depends on what you use the power for. Videos require lots of power unlike music.
I would estimate for the average new iPod that you could expect a battery life of around 2-3 hours of music, video and general usage.

Not technically according to Apple since the battery can last 500 cycles of using up the battery completely and then recharging it fully. So if you only charged it halfway and then unplugged it it should technically last 1000 half-cycles but it's better to charge it all the way whenever possible.
