First, you need iTunes in order to make a playlist. At the bottom left-hand corner of the iTunes screen, there is a little plus symbol. Click on that to make a new playlist. Name the playlist whatever you want to name it. Then click and drag the songs you want in the playlist over to the playlist's names. You can change the order of the songs according to your preference in the playlist by dragging the song either up or down. Hope this helps.
Bring up your playlist, then select the edit button, then tap and hold the song you wish to move and simply slide it up or down your playlist to the position you want it to play in.
There are several ways to create a playlist of songs and music through iTunes. The easiest way is to have the library imported then select the tracks for a single playlist. Sync the device with iTunes. From the device, like an iPod Touch, a playlist can be created using the On The Go feature.
First, put the CD with the songs you want into your computer. Your iTunes library should come up automatically once your iPod is synced in. On the songs you don't want from the CD, click the blue check marks beside them, and they will be canceled. All the rest will download on your iPod. Next, click "import CD" in the bottom right hand corner of the screen. Signals beside the songs you selected implying that the process is taking place. Once the green check marks come up beside them, it means that they are imported onto your iTunes library. DON'T click to listen to the ones that are being imported still, or they will not be fully imported. (Trust me; I've learned from experience). Finally, on the menu on the left, go to the "Recently Added" playlist. On that playlist is all the songs you just imported. For each song, drag and drop them onto your iPod playlist. You'll have to wait a while after you do this for each song. (Why? Because it has to sync your iPod, update the songs on the iPod, and sync the iPod again. I don't know why either.) Sadly, you can only do one CD at a time.
Songs
Insert a blank disc, right click on the playlist and select 'Burn Playlist to Disc'
you first make the playlist in your Itunes, then drag it to your ipod, after that its as simple as dragging songs from your Itunes to the playlist that you dragged to your ipod
If your iPod's playlist conains songs, it is all combined in the Music secion of your iPod.

Then change your iPod settings to not sync all music in your library, but instead only sync selected playlists. You can then delete songs from the playlist but still have them in your iTunes library, and they will therefore not be synced to your iPod

You probably erased the songs by accident

click playlist in the lower left hand corner, then click add playlist, name your playlist, save, then add the songs you want
If the songs are synced to the iTunes software on the Mac you can put them into a playlist in iTunes, right click on the playlist and select Burn Playlist to Disc from the menu.
to create an iPod touch playlist, here is what you do: On iTunes, look on the gray side menu. On the bottom, there are 4 buttons. The first one is a plus sign. Click it, and a text box will come up. Title your playlist. Once you do this, go to your music library. then if you click and drag the desired song to the playlist title, it will be added to the playlist. Add all the songs you want to and now, sync your iTunes playlist to your iPod. It is now on your iPod. If you ever want to add or delete(to delete, right click the song and hit delete on the menu that comes up) songs from the playlist, you can easily do this. To create a playlist on the iPod itself, go to playlist menu and hit Genius. Now, pick a song and your iPod will find all related songs and create a new playlist out of them.
