Blue Sky Scrubs specializes in scrubs. Scrubs are the medical garb that doctors, nurses and other practitioners use in the hospital or medical office settings. They have come a long way, though. Originally all blue or white,, scrubs come in a variety of colors and patterns.

White uniforms were likely perceived as being clean and demonstrating as part of the professionalism and differentiated staff by their atttire. The actual color one might assume symbolized that they must be cleaned regularly. The color might be used with doctors coats for the same reason. There is no standard color for nurse uniforms in the United Kingdom.Typically the senior nurses wear navy blue, the staff nurses wear a lighter blue and student nurses wear white.

They're a green-ish color. I can understand why you're confused but the only time in the series that a surgeon wore a pair of blue scrubs is when Turk was to repeat some of his work because of a broken arm, and when Turk's mother was in town and she said she would prefer him to wear blue scrubs, then later in the episode he's wearing blue.
