Your Sim card doesn't immediately erase a file once you delete it. Instead it just frees up the space that was occupied by that file (massage) and lists its space as available re-usable space. However until that space is overwritten by new data, in your case new messages, phone numbers etc., your old deleted file is still there and can be recovered.

You can not get your deleted messages back once they are deleted from your phone inbox.
