The difference is what was grown. Actually, most plantations grew all three crops plus things like rice. One reason the plantations were so large is they had to rotate crops and at times fields had to be left fallow. Cotton and tobacco take a lot out of the soils so to keep growing them they had to stop after a time to let the land recharge. The plantations sometimes would add a third crop to the land that had been over used by another crop. In the 1700-1800's tobacco was not considered bad. It is only in last 20 years that it has been proven that tobacco products kill people.
