There are two reasons that I know of:

One is it's just more fat than normal in your plasma which may be caused by too fatty diet or some kind of diseases or disorders such as kidney dysfunction, gallbladder removal,...

The other reason: When your blood undergoes hemolysis (destruction of red blood cells)due to one or more of a variety of possible causes, hemoglobin from dead cells are released into the plasma and wouldn't suspend as normal red blood cells when the blood is centrifuged. And those hemoglobins are what causes your blodd plasma to be pinkish.
