From the name of it's inventor: Robert Wilhelm Eberhard Bunsen.

In all fairness, he actually improved on the existing lab burners with the help of his laboratory assistant Peter Desaga, but the alliteration of Bunsen Burner rolls off the tongue better than Bunsen/Desaga Burner don't you think?

The Bunsen burner is named after its inventor, Robert Bunsen, a German chemist. Capitalizing Bunsen recognizes the proper noun, which refers to a specific person.
