∙ 12y agoThis is to do with surface area. With the same amount of food cut into smaller pieces, the water is in contact with a greater amount of the food. This means two things:-
1) more of the food is being cooked at one time
2) because all the pieces are smaller it will take less time to cook the pieces properly because they are smaller.
