Stem cells have not specialised and can therefore become any type of cell. I am not sure how they are stimulated to become one kind or another, but they can. Adult stem cells are not as good as embryonic stem cells, but because harvesting embryonic stem cells requires the destruction of a human embryo it is banned in many countries.
