As long as you don't add a lot of basil and garlic or pour off a lot of liquid, the puree operation doesn't change the weight of the raw materials. So 181 pounds of tomatos makes 181 pounds of puree. That's 2,896 ounces.
A #1 can is usually 14 1/2 oz and a #2 can is usually 29.
If 16 oz. equals 1 pound and the measurements for fresh pumpkin are equal to the canned pumpkin wouldn't that be the same in ounces. So one can is usually 14 or 15 ounces, so you would probably use a little more than one can. I'm only guessing of course, but that is what I would do.
