If we add energy to a gas, we can strip electrons off the gas atoms. This creates a plasma. Sufficient electrical voltage or a lot of heat (thermal energy) can do this. A plasma arc created by a gap across which we apply a voltage is one example. And if we consider something like the body of the sun, we find it is a superheated mix of atomic nuclei, which is a plasma.
