humans do have the best stamina, then horses, then greyhounds etc

I would dispute this. Wolves and wild dog can chase prey at speeds of 40 kmh or more for half an hour. There are very few humans who could keep running for anywhere near this long let alone as fast. This answer appears to only deal with animals in the human sphere of influence. What of birds that take on migrations of 1000s of miles only stopping at night or orca and whales who can swim for 1000s of miles without stopping to rest. There are many amazing demonstrations of stamina in the natural world, but I hope that these have been useful

No, humans do not have the best stamina of all animals. Animals such as horses, dogs, and migratory birds are known to have high levels of stamina and endurance due to their specific adaptations for long-distance travel or sustained physical activity.
