A soundtrack either includes the music used in a movie, or songs that fit with the movie in general. A karaoke CD, on the other hand, is filled with songs that (usually) have the lyrics removed, so you can sing the words yourself. You could probably find karaoke versions of some songs that appear on soundtracks, true. However, if you try to sing along to the background music of a Transformers fight scene, for example, I for one will be very impressed.
'Karaoke' is used to mean what it means in English -- that is, it refers to singing over pre-recorded music. However, it comes from the Japanese words 'kara' meaning "empty" and 'oke' which is an abbreviation of "orchestra." (Ookesutora in Japanese). Thus, karaoke is "empty orchestra," or just the musical part of a song without the vocals. In modern karaoke, the main voice or voices have been digitally removed.
