The date on the can is for best flavor and is a manufacture's suggestion. commercially canned goods will last for 100 years and not go bad. As a practical matter foods high in acidity will be OK for four years after the sell-by date and other food will last eight years. After that the flavors my get funky.

Why do canned acidic foods have a longer shelf life than foods with a more neutral pH?

Canning low-acidic foods like vegetables and meats often requires high heat and pressure to kill bacteria and spores that can cause spoilage, which can affect the texture and flavor of the food. On the other hand, acidic foods like fruits and pickles naturally inhibit the growth of bacteria, allowing them to have a longer shelf life in comparison.
