There are two reasons I can think of that you might want to do this.

One is that you're avoiding alcohol, which is somewhat silly, as very little ethanol will be left after the cooking process anyway. Still, if you're absolutely determined, you could try apple juice. Orange Juice might also work. I've seen chicken broth suggested as well, but that's probably for savory recipes; I can't imagine it would work very well in cookies.

If the alcohol itself is not the reason ... you just don't happen to have sherry around and don't want to buy a bottle just for one batch of cookies, which is certainly reasonable ... brandy or cognac would probably be fine (though rather more alcoholic than sherry), or you could use white wine or vermouth.
