Kaddu, also called Indian Pumpkin is the most popular vegetable in India. It looks like a pumpkin but has the taste and texture of butternut squash. The most common curried dish is called 'Meetha Kaddu', sweet pumpkin dry curry. It is really not a sweet dish. It is savory curry with a hint of sugar.

Kaddu has been used in India before Potatoes, Chili peppers, or cauliflower even arrived in India.

- The second most popular vegetables used is Eggplants. India has many different varieties by color (white, purple), shape (long banana, small like tomatoes, big fat like popular egg plants in USA)

- The third most popular are white potatoes. The potatoes were introduced by Portuguese traders during 1400s and gained popularity very rapidly

- The cauliflower was introduced by British during Raj. Cauliflower is probably the fourth popular vegetable

While Kaddu is the most prepared vegetable curry, the onions are almost essential in all savory curries. Onions Garlic fresh Ginger root are ground and fried in Ghee to make the basic curry-stock. The green chili peppers are added at some stage in making spicy curries
