Basically Admiral Boom was mistaking the chimney sweepers for Hottentots "We're being attacked by Hottentots!" Ready the guns!... Some people believe this is a racist scene because Hottentots were one of three tribes that occupied South Africa at the time of the European "arrival".. The Hottentots being africans, Admiral boom associated the soot covered Chimney Sweeps, and believed they were being attacked. Personally, I believe that Admiral Boom associated Hottentots with a foreign army that posed a threat (no racism intended), and attacked due to the commotion that the chimney sweeps were causing, leading the admiral to believe they were being invaded by the "bad guys" or Hottentots.. This is supported by his earlier question to the children and Mary, when he asked "Off to fight the Hottentots? Dig for Buried Treasure? In which there was no obvious correlation to race.

The reason why Admiral Boom and Mr. Binnacle fire a cannon at 8 AM and 6PM is never given unless it's in keeping with some undisclosed naval traditions such as reveille and taps .
